  • 1 tsp dried thyme
  • 1 large yellow onion, thickly sliced
  • 1 cup beef broth or water
  • 1 tbsp Worcestershire sauce (optional)

Instructions

Slow Cooker Method

  1. Season the Beef: Rub the roast with olive oil, then sprinkle with salt, pepper, garlic powder, and thyme.
  2. Prepare the Slow Cooker: Place the seasoned beef in the slow cooker. Add sliced onions, French onion soup mix, beef broth, and Worcestershire sauce (if using).
  3. Cook: Cover and cook on Low for 6-8 hours or High for 4-6 hours, until the beef is tender and easily shredded.
  4. Shred and Serve: Use two forks to shred the beef, mixing it with the flavorful broth and onions.

Instant Pot Method

  1. Optional Sear: Set the Instant Pot to “Sauté.” Heat olive oil and sear the beef on all sides until browned. Remove and set aside.

  3. Pressure Cook: Secure the lid, set the valve to “Sealing,” and cook on High Pressure for 75-80 minutes.
  4. Natural Release: Allow the pressure to release naturally for 15-20 minutes, then quick-release any remaining pressure.
  5. Shred and Serve: Shred the beef and stir it into the broth and onions.
