This rich, hearty French Onion Soup with tender London broil was the perfect comfort meal tonight. Made in the Instant Pot for ease and speed.


Ingredients

For the Soup:

  • 1–1.5 lbs London broil, thinly sliced against the grain
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 3–4 medium onions, thinly sliced
  • 3 cloves garlic, minced
  • 1/3 cup sherry
  • 6 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp thyme (fresh or dried)
  • 1 bay leaf (optional)
  • Salt and pepper, to taste

For the Bread Topping:

  • French bread or baguette, sliced into rounds
  • 1 cup shredded Swiss, Gruyère, or Provolone cheese
  • Olive oil or butter (optional, for brushing)
