Turn your leftover chicken into a delicious, protein-packed chicken salad. You can use it in sandwiches, wraps, or on a bed of greens. Do me a favor and don’t use shitty chicken in a can that is packed like tuna, cheat with a leftover rotisserie. 

Ingredients:

  • Shredded or diced cooked chicken
  • 1/3 cup mayonnaise (or Greek yogurt for a lighter option)
  • 1-2 tbsp Dijon or yellow mustard
  • 1 stalk celery, diced
  • 1/4 cup diced red onion
  • 1/4 cup chopped apple or grapes (optional, for sweetness)
  • Salt and pepper, to taste
  • Fresh herbs (like parsley or dill), chopped

Instructions:

  1. In a bowl, combine the chicken, mayonnaise, mustard, celery, red onion, and apple/grapes or something that has a tartness (craisins work too).
  2. Stir well to combine, then season with salt, pepper, and fresh herbs.
  3. Serve in sandwiches, wraps, or over greens for a quick and easy meal.
